Condiments are wonderful, aren't they? The most boring, simple meals can quickly be turned into decadent, flavorful dishes just by adding a zesty sauce or creamy dressing. If I have some staples already prepped for the week, such as brown rice and roasted veggies, and some fun and simple sauces on hand, I can whip up a delicious meal in a couple minutes. I also love that condiments allow Brett and I to eat the same basic staple foods, while having them taste completely different. For instance, I may add a creamy and zingy lemon tahini sauceto my rice and potatoes while hetops his meal offwith a soy ginger dressing.

Condiments are basically alazy and indecisive cook's best friend.

Currently, some of my favorite condiments are my Sweet Chili Sauce, Simple Lemon Tahini Dressing, and this Maple Vanilla Cashew Cream.

About This Maple Vanilla Cashew Cream

I usually don't have sweet sauces on hand, but this Maple Vanilla Cashew Cream is going to be my new staple dessert sauce. Just a dollop of this cream onto some simple, sautéed apples will give you a fun and delicious dessert. Or use it as a whipped cream replacement and put a generous spoonful on top of your pie or crumble this fall. I've even been putting a this Maple Vanilla Cashew Cream on my oatmeal for a creamy and sweet topping.

Another wonderful thing about this Maple Vanilla Cashew Cream is that is takes just minutes to prepare and is a healthy substitute for processed dairy products like Cool Whip.

Tips For Making This Maple Vanilla Cashew Cream

Once you've soaked your cashews, simply place them in a powerful blender with the remaining ingredients and blend until smooth and creamy. If you like really sweet desserts, bump up the maple syrup. If you like things that are more subtly sweet, keep this Maple Vanilla Cashew Cream as is. Adjust it to suit your taste!

Ingredients

  • 1 cup cashews soaked for 8 hours
  • ¼ cup + 2 tablespoons water
  • 2 tablespoons maple syrup
  • ½ inch piece vanilla bean

Instructions

  • Cover your cashews in filtered water and allow them soak for about 8 hours.

  • After they've soaked, drain them and rinse them.

  • Place the soaked cashews and remaining ingredients into a high speed blender or food processor and process until smooth.

Notes

  • Store in an airtight container in the refrigerator.
  • Prep time does not include the time it takes to soak the cashews.
